Raw Vegan Pizza with Spinach Basil Pesto

Oh.  My.  Gosh!  This was one of my best pizza's yet!  Honestly, Mark and I could hardly wait to dig in.  And let me tell you... crumbs did not fall.

Yummy Healthy Guilt-Free Pizza!

For this huge pizza I wanted a bright green sauce, so I created a raw vegan Spinach Basil Pesto.  For toppings, lots of colorful veggies: red cabbage, sweet onion, yellow squash, orange & yellow sweet peppers, avocado and my own sundried grape tomatoes.  I believe I made a rainbow! 

It was just too pretty to eat.  Riiiiight.


Raw Vegan Pizza Crust - ready to go into the dehydrator

I used my basic nut-free raw vegan pizza crust recipe that you can find here, but made it a bit bigger this time.  Oh and I also added a bit of white onion to the tomato mixture.  While the crust is in the dehydrator, I drool for hours as the house smells like a giant pizza! 

Rainbow Veggie Pizza

Just in case you wanted one last look at this colorful, delicious and healthy pizza before I get to the recipe.  I know, I'm such a tease (snicker snicker).

Raw Vegan Spinach Basil Pesto

1 cup packed torn basil
3 good handfuls baby spinach
1 Tbs nutritional yeast
1/3 cup pine nuts
2 Tbs hemp heart seeds
2 garlic cloves
2 Tbs lemon juice
4-5 turns black pepper
pinch or two of sea salt
*optional EVO

Put all ingredients into a blender except optional EVO (extra virgin olive oil) and blend until smooth and creamy.  You'll probably need to stop the blender off and on to work the mixture down.  It will be thick which is perfect for the pizza crust.  However, if it's too thick or you want a thinner consistency, add a little water or drizzle of EVO until desired liking.

Raw Pizza and Flatbread - Spinach Basil with Vegan Cheese

Raw Vegan Pizza

Raw pizza.  Oh yes.  And we can eat it anytime we want without the guilt.

This is another variation of my raw vegan pizza crust.  I was in a spinach and basil kind of mood, so I took the hint and into the garden I went (kitchen).

Raw Vegan Spinach Basil Pizza Crust and Flatbread

Besides the fresh basil plant that I have in the kitchen, the house smelled like basil throughout while the crust was in the dehydrator.  My oh my, was my tummy rumbling! 

I decided to make a smaller pizza than usual as I wanted a flat bread for sammies as well.  That's what is on the bottom tray.  Same recipe, but two different yummies.

Veggie Pizza on Raw Spinach Basil Crust

I wanted different toppings to go along with my spinach basil crust. Something bright and colorful - and of course tasty.  So while the crust was in the dehydrator, I made a simple orange bell pepper hemp cheese spread.  Perfect.

Then I opened the fridge and just started pulling out veggies.  I thought it would be fun to have something resemble stringy cheese - like when you bite into a pizza, you have a string of "cheese" from your mouth to the pizza.  Carrots were my choice for this and I used a peeler for it.  The rest of the veggies I thinly sliced, except for the beet root.  I used a small flower cookie cutter.  Every raw vegan pizza needs pretty purple flowers.

Before I go onto the recipe, I have to say that the carrot "cheese" truly worked!  Mark took his first big bite and stringy "cheese" went from his mouth to the pizza in his hand.  We both smiled.  "Cheesy" smiles of course.

Raw Pizza and Flatbread - Spinach Basil

3/4 cup flax meal
1/2 cup flax seeds
1/2 cup hemp heart seeds
1/4 cup nutritional yeast
1 Tbs phyllium husk
1/8 tsp sea salt

Combine all ingredients in large bowl and set aside.

1/2 cup sundried tomatoes - soaked in 1 1/2 cups water for approximately 30 minutes.  Drain and reserve liquid for next step.
2 large tomatoes - roughly chopped (just about 2 cups)
1/2 large yellow bell pepper - roughly chopped
2 cloves garlic - minced or diced small
1/2 cup onion - roughly chopped
pinch of sea salt

In food processor, process until well combined.  Leave in processor and add in:

2 handfuls baby spinach
small handful basil

Continue processing until well combined. 

Add 1 cup of the reserved soak water to the dry mix bowl and stir well.  This will be thick.  Stir in the wet mixture.  If it seems too thick to spread, add some more soak water a little at a time. 

Spoon the  mixture onto two lined dehydrator trays.  You can either make 2 pizzas or flatbread or one of each.  With your clean hands or spatula, form into shape of choice.  You don't want it too thin as it will shrink up a bit in the dehydrator.  Also, the thicker it is the longer dehydrator time.

Put into the dehydrator at 145° F for 1 hour only then turn down to 115° F for another 5-7 hours or until done.  Total time will vary due to location, weather, dehydrator, wetness, thickness, etc.  When the top is dry to touch, transfer it to a mesh tray - put a mesh sheet on top of the crust/bread, flip it over and remove it from the lined sheet by slowly peeling it off.  Put it back in the dehydrator until done.  I typically rotate the tray around, but is not necessary.  The small pizza crust took a total of 6 hours this time and the large flatbread about 7 1/2.

Top the pizza with your favorite toppings and enjoy!  For the flatbread, cut it into desired sizes.  Store in sealed container on counter for 1-2 days or in fridge for 4-5 days.  Can be stored in freezer for longer storage.

Note: you can also dehydrate longer for a cracker instead of bread.

Raw Flat Bread and Vegan Cheese Spread

Orange Bell Pepper Hemp Cheese Spread
this makes more than you need for the pizza, but is versatile like any other cheese spread

1 orange bell pepper
1 cup hemp heart seeds
3 Tbs nutritional yeast
juice of half a lemon
pinch of sea salt

In blender, blend all ingredients until smooth and creamy.  This makes a thick cheese spread.  If you want a thinner cheese, add a little water at a time and blend. 

Store in sealed container in fridge for up to 4 days.

Raw Vegan Fig Dressing

Raw Vegan Fig Dressing - perfect on green and fruit salads!

Obviously, being a raw vegan means you eat a lot of salads too, but they don't have to be boring.  I make our dressings from mainly fruits and veggies, along with a few other ingredients.  Sometimes I don't use dressing at all, but Mark does so I love creating a variety for us both.

This refreshing salad is a mix of greens, strawberries, pear, dried figs and walnuts with my thick n creamy fig dressing.  This also makes a wonderful fruit dip.

Raw Vegan Fig Dressing

1 cup dried figs
2 Tbs lemon juice
2 cups fresh water

Remove fig stems, cut in half and soak in the 2 cups fresh water for at least 60 minutes and then drain. Reserve the soak water.  In blender, add the drained figs, lemon juice and 1 cup of the soak water. Blend until smooth and creamy. If it is too thick, add more soak water until desired liking.

Store in sealed jar in fridge for up to 5 days.

Cherimoya Parfait - Raw Vegan Smoothie

I have a new love and it's name is Cherimoya!  I won a tropical fruit box on Instagram via one of the other IG accounts I follow.  Anyway, the fruit box arrived from Melissa's Produce and I was floored by the amount of fruit that was in it!  Most of them I had never had, but have been wanting to try.  I was beyond excited!

This delicious custard like fruit (it is also known as a "custard apple") is amazing and I'm completely hooked - so is Mark.  It's a little bit of work to get all the big seeds out and scrape the fruit off of the peel - do NOT eat the peel - but believe you me it is more than worth it!   

Cherimoya Fruit

This took a bit of time with the layering process as I wanted it to look as delicious as it tastes!  Friday's are my days off so I had plenty of time. I was going to also garnish it, but I love the way it turned out as is. And the taste... out of this world! Like a pudding smoothie.

Cherimoya Parfait Smoothie

Green layer:
2 frozen bananas
1 huge handful spinach
2 Tbs hemp heart seeds
1 Tbs flax meal
1/2 cup water (adjust as needed)
1 tsp Matcha Green Tea Powder (optional)

Blend, pour into a separate container and put in freezer while making next layer.

Cream layer:
1 cherimoya - peeled and seeded
1 frozen banana

Blend, pour *half* of the mixture into separate container and put in freezer.

Orange layer:
With remaining cream layer in blender, add 1 Tbs goji berries and blend.

Take the containers out of the freezer and get ready to create!  After each layer, put the glass in freezer for about 5-10 minutes to let it set up (not frozen solid). With a small spatula or spoon, slowly add in another layer - start around the rim/inside of the glass first then work your way into the middle - this helps to keep the layers separate.  Do as many layers as you wish or simply blend everything together.  You can eat this super thick n creamy delicious parfait smoothie with a spoon or drink it with a straw. 

While waiting in between layers, you can do Sun Salutations or the dishes - your choice. Enjoy!

Raw Vegan Spicy Hemp Cheese Sauce - Nut-Free

Cheese Sauce - Raw, Vegan and Nut-Free

This is a recipe from my old blog that I've transferred here.

Today was such a beautiful day all around.  We got some needed work done around the house in the morning, prepared veggies for Mark's lunch for tomorrow, played barber and cut Mark's hair, went for an awesome bicycle ride and now relaxing on the couch until it's time to create dinner. 

Oh wait, I forgot one little detail... made a batch of my hemp cheese.  Yum yum yum!



We sat down to have lunch and dug right into our veggies and cheese sauce.  I dunked my zucchini into the bowl of deliciousness, took a bite and looked at my cheesy zucchini - it looked like a half moon.  Mark's exact words were: "Well, they say the moon is made of cheese."  He always makes me laugh!

Not only is this cheese sauce gluten, dairy and nut-free, but it is super healthy and guilt-free!  Okay, on with my recipe as I'm wanting to dig back into the cheesy goodness.

Raw Vegan Hemp Cheese Sauce

1/4 cup water
1 red bell pepper
1 large garlic clove
1/2 tsp onion powder
1/2 tsp sea salt (or to taste)
3 TBS nutritional yeast (heaping)
1/8 tsp turmeric
1/8 tsp cayenne pepper
2 TBS raw apple cider vinegar
1 Serrano chili pepper, seeds removed (or pepper of choice)
1 cup hemp heart seeds

Put everything into your blender and blend until smooth and creamy.  You can add more water if you want a thinner consistency.  Sometimes I add a little tahini for added creaminess.

Living in the southwest we tend to love heat, especially in our food.  Well, actually it took Mark a long time to realize that ketchup was NOT salsa (silly boy).  Now he loves heat in his food too :)  But no worries if you don't as you can change the flavor of the cheese by omitting both peppers and enjoy as is or add herbs and spices of your choice.  You can also use a yellow bell pepper instead of the red.  So many choices.

Time to eat.  Chow for now.

Zucchini.  The versatile vegetable that is loved by raw vegans alike and is a main staple in our home.  From simple raw chips to pasta noodles, fries, smoothies, desserts, lasagna to wraps and... well I'll stop here before I start drooling all over my laptop.


Easy Raw Vegan Cheese Recipe

I've had a love affair with zucchini all my life.  My grandma used to make this yummy tomato, yellow squash and zucchini dish that I would scarf down whenever she made it.  Oh my gosh that was so delicious!  I think I need to recall how she made it and turn it into a raw dish - Rocki style.


Zucchini Rolls with Raw Vegan Cashew Pine Nut Cheese

Zucchini rolls are so easy to make and the variations you can come up with are endless.  For this version I made one of my chunky raw cashew cheese recipes to hold all the goodies inside.  Then I grabbed some veggies for the filling, tuned the radio to KSLX for some good old classic Rock n Roll then started rolling zucchini... and rockn' out.

Cashew Pine Nut Cheese - Raw Vegan Zucchini Rolls

For the cheese:
1 cup cashews (soaked for at least 4 hours, rinse and drain)
2 Tbs pine nuts
1 garlic clove
1/3 cup nutritional yeast
1/8 tsp sea salt
1/4 cup + 1 Tbs water

Put all ingredients into your vitamix/blender and blend until semi-smooth - unless you want it entirely creamy.  If so, then continue to blend and you may need to add a little more water.  I wanted this cheese to have a thick and somewhat chunky texture to hold it's shape.

For the wraps:
1 very large zucchini
green onions
mushrooms
spinach
cilantro

I used my mandolin to make thin zucchini slices.  You can use the veggies I have listed or other veggies you would like (tonight we had zuc rolls with a pile of shredded carrots and the cheese for the filling - nom nom nom!)  Spread some of the cheese onto the zucchini slices.  Start at one end and top with one of the veggies, roll once, add another veggie, roll once... you get the idea.  End with a little dab of cheese to make sure it sticks.

And there you have it.  Zucchini rolls 101.  Easy as pie.  Mmmmm... pie.  I think I want dessert now.

Raw Vegan Smoothie Bowl - Coconut Fruit

I love smoothies for breakfast and my favorite is green smoothies - the greener the better.  However, a thick and creamy fruit smoothie bowl is always fun to eat from! 

One thing I absolutely love about creating smoothies is that there is a *ton* of options.  Just think about all the fruit, greens and veggies that are available to you and the numerous ways you can interchange them to create a new smoothie each and every time.  I LOVE eating this way - it's not only nutritious and delicious, but fun too!

Okay, let's get to the recipe for my smoothie bowl and then it's into the studio I go - then class this afternoon.

Raw Vegan Coconut Fruit Smoothie Bowl  
serves 1 healthy portion or 2 small servings

1 cup coconut milk
2 large frozen ripe bananas
1 Tbs flax meal
1 Tbs maca powder
2 tsp chia seeds
coconut water as needed in case too thick (or plain water is fine)

Put all ingredients into your vitamix/blender, except the chia seeds.  Blend until thick and creamy.  Depending on fruit size and blender, you may need to add a little coconut water.  While blender is running, add in chia seeds just long enough to mix in. 

Pour into serving bowl(s) and top with fruit of choice - I topped mine with star fruit, strawberries, dried coconut shreds and more chia seeds.  Set in fridge or leave on counter for about 10-15 minutes for chia seeds to absorb (this will thicken it) or eat immediately and enjoy this delightfully delicious and nutritious breakfast smoothie.

Just because you eat and live a raw vegan lifestyle doesn't mean it's boring.  Stick around awhile or come back often and you'll see why I say that.
